Spinach Enchiladas

Look at this cheesy goodness! I've been looking for an excuse to make these cheesy spinachy enchiladas and the occasion arose on this past Friday... the first Friday of Lent. No meat day :)
It was my first time using Ricotta Cheese in a recipe and I think I need to make more recipes that include Ricotta. I'm a huge fan of Carlos O'Kelly's Spinach and Mushroom Enchiladas and my homemade version came out very close.
