New Recipe: Zucchini Pizza




This is a recipe I've been wanting to try for a while now. My mom emailed it to me. She had found it in her Angels on Earth magazine. It was pretty tasty - but ended up being a bit rich for me. I could only handle one piece, because by the second it was just too filling. Still a tasty alternative to traditional pizza, especially if you like zucchini.


Zucchini Pizza

Extra Virgin Olive Oil
4 Zucchini washed and cut into 1/4 inch slices
1/2 tsp salt
3 eggs
1/3 cup wheat flour
1 pinch oregano
1 cup grated parmesan cheese
1 cup grated mozarella cheese
1 cup tomato sauce

Directions:
1. Preheat the oven to 350 degrees. Grease the bottom of a large oven dish with the olive oil (13X9 or can be larger)
2. Arrange sliced zucchini in dish, can be two layers. Salt lightly and let sit for 15 minutes.
3. In large bowl beat eggs, add flour, oregano and 1/2 cup of each cheese. Mix well, pour mixture over zucchini and bake for 25 minutes. Remove from oven.
4. Brush olive oil over top. Change oven setting to broil, brown five minutes and remove from oven. Put temperature back to 350 degrees.
5. Spread tomato sauce. Sprinkle remaining cheese, bake for another 25 minutes. Serves 6.
